Poultry Brine

Special thanks to Chef Jeremy Law of SoCo Restaurant in Wilson for providing this.

1 Gallon of water

1 Cup of Kosher Salt (5 oz)

½ cup of sugar

¼ cup of Black Peppercorns

10 cloves of garlic smashed

3 lemons halved

Boil all ingredients for 1 minute and stir to dissolve salt and sugar

Let cool completely. Brine turkey in fridge for 12 to 18 hours. Remove and rinse the turkey. Prepare bird as you see fit
